The empanada, a crescent of flavor

Empanada is one of the most typical, beloved and remembered dishes of Latin Americans. Each country has its own typical recipes, but they agree that they are croissants made from corn or wheat flour filled with different ingredients that accompany any meal and can be enjoyed at any time of the day.

Colombians enjoy as often as possible delicious baked and fried empanadas with a variety of fillings and sauces that accompany these little moons of flavor.


Among the most requested, remembered and savored is the potato and meat empanada. Today you will learn a super easy recipe for empanadas with products that you can find at Ruufe so that you can enjoy those flavors that come to mind and cheer your heart.

Ingredients

Preparation

For the dough:


1 ½ cup of yellow precooked corn flour PAN

2 cups of water.

1 tablespoon vegetable oil.

½ tablespoon color

½ teaspoon salt.

In a bowl add hot water, oil, color and salt and mix the ingredients.

Then add the PAN yellow precooked corn flour and knead with your hands until it feels smooth.

Cover the dough with plastic and let it rest for about 10 minutes.

For the filling:


2 cups white potatoes, peeled and diced.

1 chicken or vegetable broth tablet.

1 tablespoon olive oil.

¼ cup chopped white onion.

1 cup chopped tomato.

½ teaspoon salt.

¼ cup chopped green onion.

1 clove of garlic, minced.

2 tablespoons chopped fresh cilantro.

2 tablespoons chopped red paprika.

Triguisar seasoning

1/2 pound ground or shredded meat.




Cook the potatoes in salted water for 25 minutes, drain and mash.

Sauté the onion for 5 minutes, then add the tomatoes, garlic, paprika, cilantro, triguisar seasoning and cook for 15 minutes.

Add the meat and stir constantly.

Remove from heat and add the mashed potatoes, mixing until smooth.

To assemble the empanadas:


Once the dough is stretched, use a round mold or bowl to form circles that will be the empanadas.

Add a spoonful of filling to each circle.

Close each circle forming half moons.

Close with your fingers or a fork.

In a pot, heat the oil until it is at 360° F and add the empanadas until they are golden.
