Black cake: tradition in Colombia

This is one of the Colombian homemade sweets that cannot be missed at any celebration. It is usually given as a wedding or Christmas gift. Its respective black color is due more than anything to the use of burnt panela in its preparation since it is moistened with sweet wine after it has been baked.

Now, according to history, this sweet was introduced in the 19th century by the French in Venezuela and Argentina. During the journey, they imagined the recipe for a cake with easy-to-preserve ingredients such as rum, honey and candied fruit (Recipes from Colombia, 2021).

What does this famous cake contain?

Among Colombian desserts, the preparation of the Colombian black cake is a true ritual, since the fruits must be soaked in rum 2 to 3 weeks in advance. The mixture of candied fruits can vary. Some preparations include dried berries and raisins. It can be accompanied with milk, coffee, dark beer and wine.

As for the maceration of candied fruit, alcohols are used that can vary depending on the recipe. In certain areas of Colombia, sweet port wine is used. Other preparations use dark beer and even brandy. The important thing is that the longer the fruit has been macerated in alcohol, the tastier it will be. Maceration of the fruit, to get it to perfection, takes several weeks (Dadoun, 2018).
